To all my friends who are cheese heads, curd connoisseurs, turophiles (had to look that one up), it’s time to take up arms to save the spread you love so dearly.
It’s true, some of the most famous French cheeses are on the endangered list due to a shrinking supply of microbial diversity.
So box your brie, conserve your Comté, safeguard your Selles-sur-Cher. It’s going to be a tough road ahead if they can’t figure out how to keep the supply of cheese going.
(BTW, I kind of lose interest in food that “smells like feet”. But by all means, I’ll never stand in the way of another person’s dietary delights.)
